Crowding your pan with too much food when frying will cause the food to steam and keep it from getting crispy and brown.
Rolling your pie dough can get a bit, well, sticky. Chilling it for about an hour before rolling will help prevent sticking.
Check Your Heat
To check the temp of oil for frying, drop a cube of bread in the pan. If it turns brown and bubbles in 30 seconds, your oil is ready to fry.
