Ingredients

  • 2 large potatoes
  • 2 large carrots
  • 2 medium zucchini
  • 1 large onion
  • 3 large eggs
  • 1 1/2 tsps. salt
  • 3/4 tsp. pepper
  • 3/4 cup matzo meal
  • Crisco® Pure Vegetable Oil
  • Applesauce or sour cream

Directions

  • Step 1

    PEEL potatoes and carrots. Grate potatoes, carrots, zucchini and onion with a food processor or grate by hand.

  • Step 2

    MIX together grated vegetables, beaten eggs, salt and pepper in large bowl. Stir in matzo meal. Shape batter into pancakes using 1/4 cup mixture for each.

  • Step 3

    HEAT 1 to 2 tablespoons oil over medium-high heat in large skillet. Fry latkes, a few at a time, 2 minutes per side or until golden brown and crisp. Add additional oil as necessary. Drain on paper towels. Serve latkes hot with applesauce or sour cream.
