Spicy Black Beans with Bacon and Cheese

Ingredients
- 1/4 cup Crisco® Pure Vegetable Oil
- 2 cloves garlic
- 1 medium onion
- 1 tbsp. ground cumin
- 1 tsp. chili powder
- 1 (15 oz.) can black beans
- 1/2 cup tomato juice
- 1/4 to 1/2 tsps. salt
- 2 tbsps. chopped fresh cilantro
- 3 slices bacon
- 1/3 cup shredded Monterey Jack cheese
Directions
- Step 1
HEAT oil in medium saucepan over medium heat. Add garlic, onion, cumin and chili powder. Cook and stir 3 to 4 minutes or until onions are soft.
- Step 2
ADD black beans, tomato juice and salt. Bring to a boil. Immediately reduce heat and simmer, stirring occasionally, until beans are heated through. Stir in cilantro. Garnish with crumbled bacon and shredded cheese.
