Ingredients

  • 1 lb. fresh okra
  • 1 cup plain yellow cornmeal
  • 1/2 cup Crisco® All-Vegetable Shortening
  • 1/2 cup Crisco® Baking Sticks All-Vegetable Shortening
  • Salt and pepper

Directions

  • Step 1

    RINSE okra. Remove caps. Cut pods into one-half inch slices. Toss with cornmeal.

  • Step 2

    HEAT shortening to 365ºF in electric skillet or over medium-high heat in large heavy skillet. Fry single layer of okra about 8 to 10 minutes or until golden brown on all sides, turning carefully. Do not overcook or okra will become too soft.

  • Step 3

    DRAIN on paper towels. Sprinkle with salt and pepper. Serve immediately.
