Ingredients

  • Crisco® Original No-Stick Cooking Spray
  • 2 tbsps. Crisco® Pure Vegetable Oil
  • 1/3 cup chopped onion
  • 1/3 cup chopped celery
  • 2 tbsps. all-purpose flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 (5 oz.) can PET® Evaporated Milk
  • 1 (10 oz.) pkg. frozen whole kernel corn
  • 1 large egg
  • 2 tbsps. butter
  • 1/2 cup cracker crumbs

Directions

  • Step 1

    HEAT oven to 350ºF. Coat 1-quart casserole lightly with no-stick cooking spray.

  • Step 2

    HEAT oil in 1-quart saucepan. Add onion and celery. Cook and stir over medium heat until tender. Stir in flour, salt and pepper. Blend in evaporated milk. Cook and stir until mixture just thickens. Stir in corn and egg. Pour into prepared casserole.

  • Step 3

    MELT butter in 1-quart saucepan. Stir in cracker crumbs. Sprinkle on top of corn.

  • Step 4

    BAKE 25 to 35 minutes, or until golden brown. Garnish with parsley, if desired.
