Red Beans with Sausage

Ingredients
- 1 lb. andouille, kielbasa or other smoked pork sausage or turkey smoked sausage
- 2 tbsps. Crisco® Pure Vegetable Oil
- 2 stalks celery
- 1 large onion
- 1 large green pepper
- 1 clove garlic
- 2 (15.5 oz.) cans kidney beans
- 2 cups water
- 2 bay leaves
- 1 tsp. Italian seasoning
- 1/2 tp 1 tsps. red hot pepper sauce
- 1/2 tsp. salt
- Hot cooked rice
Directions
- Step 1
COOK sausage in 3-quart saucepan over medium-high heat about 3 minutes or until lightly brown. Remove from pan with slotted spoon. Discard drippings in pan. Reduce heat to medium.
- Step 2
HEAT oil in pan. Add celery, onion, green pepper and garlic. Cook and stir 3 minutes or until onions are translucent. Add beans, water, bay leaves, Italian seasoning, hot red pepper sauce and salt. Return sausage to pan. Bring to boil.
- Step 3
SIMMER 35 to 40 minutes or until thick, stirring occasionally. Discard bay leaves. Serve immediately over hot cooked rice.
