Ingredients

  • 2 tbsps. Crisco® Pure Vegetable Oil
  • 1 clove garlic
  • 1 small onion
  • 2 tsps. fresh oregano leaves
  • 1 tsp. fresh marjoram leaves
  • 1 each medium zucchini and yellow summer squash
  • 1 small orange or red pepper
  • 1 cup fresh grape or cherry tomatoes, halved
  • 2 tbsps. sliced pitted black olives
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 tbsps. grated Parmesan cheese

Directions

  • Step 1

    HEAT oil in large skillet. Add garlic and onion. Cook and stir over medium heat 2 to 3 minutes.

  • Step 2

    ADD zucchini, yellow squash, pepper strips, fresh oregano and marjoram leaves. Cook and stir 4 to 5 minutes, or until tender. Stir in tomatoes, olives, salt and pepper. Cook until heated through. Garnish with Parmesan cheese if using.
