Ingredients

  • 1 lb. fresh asparagus spears
  • 8 slices baked ham
  • 2 tbsps. Crisco® All-Vegetable Shortening
  • 2 tbsps. Crisco® Baking Sticks All-Vegetable Shortening
  • 2 tbsps. all-purpose flour
  • 1/4 tsp. salt
  • Dash white pepper
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 2 large egg yolks
  • 1/4 cup shredded sharp Cheddar cheese
  • 1 tbsp. lemon juice
  • Paprika
  • Parsley

Directions

  • Step 1

    HEAT oven to 325ºF.

  • Step 2

    PLACE 1 or 2 asparagus spears in center of each ham slice. Fold slice around asparagus to form a roll; secure with a toothpick. Place roll-ups on a baking sheet.

  • Step 3

    BAKE 15 to 20 minutes or until ham is thoroughly heated. Make sauce while roll-ups are heating.

  • Step 4

    MELT shortening in a heavy saucepan. Blend in flour, salt and pepper; heat until bubbly. Stir in broth and milk. Bring rapidly to boiling, stirring constantly. Cook 1 to 2 minutes. Stir about 3 tablespoons of the hot mixture into egg yolks and immediately blend into hot mixture. Cook and stir 3 to 5 minutes over low heat. Remove from heat. Stir in cheese until melted. Blend in lemon juice.

  • Step 5

    PLACE roll-ups on hot platter; remove picks. Spoon sauce over roll-ups. Sprinkle with paprika. Garnish with parsley. Serve hot.
