Green Tomato Crisps

Ingredients
- 4 very firm green tomatoes
- 3/4 cup plain yellow cornmeal
- 1 1/4 tsps. salt
- 1/2 tsp. sugar
- 1/8 tsp. pepper
- 1/2 cup Crisco® All-Vegetable Shortening
- OR 1/2 stick Crisco® Baking Sticks All-Vegetable Shortening
Directions
- Step 1
CUT out stem ends of tomatoes. Slice 1/2-inch thick.
- Step 2
COMBINE cornmeal, salt, sugar and pepper on wax paper. Coat both sides of tomato slices with mixture.
- Step 3
HEAT shortening to 365ºF in electric skillet or over medium-high heat in large heavy skillet. Place single layer of tomato slices in skillet. Brown each side lightly. Cook only until tender. Serve immediately.
