Ingredients

  • 2 tbsps. Crisco® Butter Flavor All-Vegetable Shortening
  • 3 cups fresh or thawed, frozen corn kernels
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. pepper
  • 2 tbsps. chopped fresh cilantro
  • 1 tbsp. fresh lime juice
  • 1 tsp. finely grated lime peel
  • 1/2 cup crumbled queso fresco

Directions

  • Step 1

    HEAT shortening in large skillet over medium-high heat. Add corn and stir-fry 3 minutes or until desired doneness.

  • Step 2

    STIR in paprika, salt, cayenne pepper and pepper until evenly blended.

  • Step 3

    STIR in cilantro, lime juice and lime peel just before serving. Sprinkle with cheese.
