Ingredients

  • 2 medium zucchini
  • 1/3 cup all-purpose flour
  • 1 tsp. salt
  • 1/4 tsp. freshly ground white or black pepper
  • 2 large eggs
  • 1 cup bread or cracker crumbs
  • 1 cup Crisco® Butter Flavor All-Vegetable Shortening
  • 1 cup Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
  • 1 tbsp. fresh lemon juice

Directions

  • Step 1

    WASH zucchini; trim ends. Cut in half crosswise, then cut each half into 8 lengthwise strips.

  • Step 2

    COMBINE flour, salt and pepper in resealable plastic bag. Place beaten eggs and crumbs in separate shallow dishes. Shake a few strips of zucchini at a time in flour mixture, dip in beaten egg, then press in crumbs.

  • Step 3

    HEAT shortening in a deep fryer to 365ºF. Fry zucchini a few at a time about 4 to 5 minutes, turning once, until golden brown. Sprinkle with lemon juice if desired.
