Bok Choy Mushroom Stir-Fry

Ingredients
- 2 tbsps. Crisco® Pure Canola Oil
- 1 cup thinly sliced onions
- 1/2 cup chopped red pepper
- 3 to 4 cloves garlic
- 1/2 tbsp. grated fresh ginger
- 1 lb. coarsely chopped bok choy
- 1/2 lb. sliced mushrooms
- 2 tbsps. fresh lemon juice
- 1 tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. salt
Directions
- Step 1
HEAT oil in large heavy skillet over medium-high heat. Add onions, pepper, garlic and ginger. Stir-fry for about 1 minute. Add bok choy and mushrooms. Stir-fry for about 1 minute.
- Step 2
ADD lemon juice, soy sauce, sugar and salt. Stir-fry for about 2 to 3 minutes until vegetables are crisp-tender.
