Spinach Salad with Oranges and Raspberries

Ingredients

  • DRESSING
  • 1/3 cup Crisco® Pure Canola Oil
  • 1/4 cup orange juice
  • 3 green onions
  • 3 tbsps. rice vinegar
  • 1 tbsp. honey
  • 1 tbsp. chopped fresh tarragon
  • 1 tsp. grated orange peel
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • SALAD
  • 1 (6 oz.) pkg. baby spinach
  • 2/3 cup sliced almonds
  • 1 (11 oz.) can mandarin oranges
  • 1 cup fresh raspberries

Directions

  • Step 1

    WHISK together dressing ingredients in small bowl.

  • Step 2

    COMBINE spinach, 1/3 cup almonds, mandarin oranges and raspberries in large bowl with enough dressing to coat.

  • Step 3

    DIVIDE among serving plates. Sprinkle with remaining 1/3 cup almonds. Serve.
