Ingredients

  • 1 cup broccoli florets
  • 1 carrot
  • 1/4 cup water
  • 2 tbsps. Crisco® Pure Vegetable Oil
  • 1 garlic clove
  • 1/2 sweet onion, such as Vidalia or Bermuda
  • 1 cup sliced mushrooms
  • 1 cup fresh corn or frozen corn kernels
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 tsp. salt
  • 1 pre-baked pizza crust
  • 1 1/2 cups prepared pizza sauce
  • 2 cups shredded cooked turkey or chicken
  • 1 1/2 cups (6 oz.) shredded mozzarella cheese

Directions

  • Step 1

    HEAT oven to 450ºF.

  • Step 2

    PLACE broccoli and carrots in microwave-safe bowl with water. Cover tightly with plastic wrap. Microwave on HIGH (100% power) 2 minutes. Drain.

  • Step 3

    HEAT oil in large skillet over medium-high heat. Add garlic and onions. Cook and stir 30 seconds. Add mushrooms. Cook and stir 3 minutes. Add corn, broccoli, carrot, red pepper flakes and salt. Cook and stir 2 minutes.

  • Step 4

    PLACE pizza crust on baking sheet. Spread sauce over crust. Top sauce with cooked vegetables and turkey. Sprinkle with cheese.

  • Step 5

    BAKE 10 to 12 minutes, or until cheese melts and crust is crisp. Let stand 2 minutes. Slice and serve.

  • Step 6

    Other vegetables such as yellow squash, bell peppers or eggplant slices can be used along with or instead of those listed.
