Ingredients
- Crisco® Original No-Stick Cooking Spray
- 2 tbsps. Crisco® Pure Vegetable Oil
- 6 green onions
- 2 cloves minced garlic
- 2 tsps. cumin
- 1 1/2 lbs. lean ground beef
- 3/4 cup crushed tortilla chips
- 3/4 cup salsa
- 1 large egg
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
Directions
- Step 1
HEAT oven to 375ºF. Coat 9 x 5-inch loaf pan with no-stick cooking spray.
- Step 2
HEAT oil in medium skillet on medium-high heat. Add green onions, garlic and cumin. Sauté 2 to 3 minutes or until green onions are soft and clear. Place in large mixing bowl.
- Step 3
ADD ground beef, crushed tortilla chips, 1/2 cup salsa, egg, salt and pepper. Mix well to blend. Press into prepared pan. Spread remaining 1/4 cup salsa over top.
- Step 4
BAKE 40 to 45 minutes or until juices run clear when center is pierced with small knife.
- Step 5
Meatloaf mixture can be prepared up to one day in advance. Cover tightly with plastic wrap and refrigerate. Add 10 minutes to baking time.
