Sea Scallops in Tri-Colored Salsa

Ingredients

  • SALSA
  • 1 medium red pepper, diced
  • 1 medium yellow pepper, diced
  • 1/2 cup thinly sliced green onion
  • 1 (4 oz.) can chopped green chiles
  • 1/4 cup Crisco® Pure Canola Oil
  • 1/4 cup lime juice
  • 1/4 cup chopped cilantro
  • 1 tsp. salt
  • 1 tsp. sugar
  • SCALLOPS
  • 2 tbsps. Crisco® Pure Canola Oil
  • 2 lbs. raw sea scallops or bay scallops
  • Salt and pepper, to taste
  • 3 cloves garlic
  • Garnishes: Fresh, chopped tomatoes and cilantro sprigs

Directions

  • Step 1

    MIX together salsa ingredients in large bowl.

  • Step 2

    HEAT 2 tablespoons oil in large frying pan over medium high heat. Season scallops with salt and pepper. Add garlic and scallops. Sear scallops about 1 1/2 minutes per side or until cooked through. Remove from pan and keep warm.

  • Step 3

    POUR salsa into pan. Heat just until warm. Add scallops to pan with salsa. Cook only until all ingredients are heated through.

  • Step 4

    SERVE warm. Garnish with fresh chopped tomatoes and cilantro sprigs.
