Savory Apricot Chicken with Vegetable Rice

Ingredients
- 1 (5.6 oz.) envelope rice medley in a savory sauce with carrots & peas
- Additional ingredients to prepare rice medley per package directions
- 1 tbsp. Crisco® Pure Vegetable Oil
- 8 boneless skinless chicken thighs (1 1/4 lbs.)
- 1 (12 oz.) jar Smucker's® Apricot Preserves
- 1 (1 oz.) envelope dry onion soup mix
- 1/4 cup water
Directions
- Step 1
PREPARE rice medley according to package directions.
- Step 2
Meanwhile, HEAT oil in large skillet over medium-high heat. Add chicken thighs. Cook until golden brown on both sides. Remove chicken from skillet. Set aside.
- Step 3
COMBINE preserves, soup mix and water in same skillet. Bring to a boil, stirring frequently. Reduce heat to medium-low. Simmer 2 minutes.
- Step 4
RETURN chicken to skillet. Cover and simmer 8 to 10 minutes or until internal temperature reads at least 165°F. Serve over prepared rice medley.
