Roasted Summer Squash with Turkey and Chiles

Ingredients

  • 4 medium zucchini or yellow squash, or 2 of each (7- to 8-inch)
  • 3 tbsps. Crisco® Pure Vegetable Oil
  • Salt and pepper
  • Ground cumin
  • Chili powder
  • 1 1/2 cups chopped yellow onion
  • 1 tsp. minced garlic
  • 1 pound ground turkey
  • 1 (14.5 oz.) can petite-cut or regular diced tomatoes, well drained
  • 1/2 cup dry Italian-seasoned bread crumbs
  • 1 large egg
  • 1/2 cup chicken broth

Directions

  • Step 1

    SCRUB zucchini and/or yellow squash. Trim ends. Cut in half lengthwise; scoop out pulp, leaving a 1/2-inch thick shell. Rub entire surface of each squash half with a scant 1/2 teaspoon oil. Sprinkle cut sides lightly with salt, pepper, cumin and chili powder.

  • Step 2

    HEAT 2 tablespoons oil in large skillet over medium heat. Add onion and cook 7 minutes or until tender. Stir in garlic; cook 1 minute. Add ground turkey, 1 tablespoon cumin, 1 teaspoon chili powder, 3/4 teaspoon salt and 1/4 teaspoon pepper. Cook 4 to 5 minutes or until turkey is thoroughly crumbled. Remove from heat. Stir in drained tomatoes, 1/4 cup bread crumbs and egg until blended.

  • Step 3

    HEAT oven to 350°F. Spoon turkey mixture into the squash shells, mounding on top. Place in a large baking dish or 15 x 10 x 1-inch baking pan. Toss remaining 1/4 cup bread crumbs with 1 teaspoon oil until blended. Sprinkle over filled squash. Pour chicken broth into baking dish. Cover and roast 20 minutes. Uncover and roast an additional 15 to 20 minutes or until squash are tender.
