Quick Southwest Shrimp with Chili Lime Salsa

Ingredients
- 1 lb. uncooked shrimp
- Crisco® Original No-Stick Cooking Spray
- Juice of 2 limes
- 1 tsp. chili powder
- Salt and pepper to taste
- 1 cup finely chopped red onion
- 1 or 2 jalapeño peppers
- 1 large tomato
- 1/4 cup finely chopped fresh cilantro
- Hot cooked pasta or white rice
Directions
- Step 1
PLACE shrimp in a medium mixing bowl. Coat lightly with no-stick cooking spray. Add half the lime juice. Sprinkle with chili powder and salt and pepper to taste. Toss to coat.
- Step 2
COAT large skillet generously with no-stick cooking spray. Heat over medium-high heat. Add onion and jalapeno. Cook and stir about 2 minutes. Add shrimp; cook and stir 2 minutes or just until shrimp are opaque in center. Stir in tomato, cilantro and remaining lime juice. Cook 1 minute. Season with additional salt and pepper to taste.

SERVE immediately over cooked pasta or white rice.
