Quick Caribbean Grilled Chicken
Ingredients
- 4 boneless, skinless chicken breasts, trimmed, rinsed and patted dry
- MARINADE
- 3 tbsps. soy sauce
- 3 tbsps. Crisco® Pure Vegetable Oil
- 1 tsp. grated lime peel
- 1 tbsp. fresh lime juice
- 1 clove garlic
- 1/2 tsp. ground cinnamon
Directions
- Step 1
PLACE chicken breasts between layers of plastic wrap. Pound with mallet to an even thickness of about 1/2 inch. Pound down and out from the center for a uniform thickness.
- Step 2
COMBINE marinade ingredients in large resealable food storage bag. Shake to mix. Add chicken breasts. Turn to coat well. Marinate 2 hours to overnight in refrigerator.
- Step 4
GRILL 6 minutes per side over medium heat or until internal temperature reaches 165°F, turning once. Baste with marinade only during first 2 minutes of grilling; discard remaining marinade.
- Step 6
BROIL 4 inches from heat source, about 4 to 6 minutes per side or until internal temperature reaches 165°F, turning once. Baste with marinade only during first 2 minutes of broiling. Discard remaining marinade.
