Ingredients

  • Crisco® Original No-Stick Cooking Spray
  • 1/3 cup Crisco® Pure Vegetable Oil
  • 1 boneless, skinless chicken breast
  • 6 oz. fully cooked smoked sausage (about 2 small links)
  • Salt and pepper to taste
  • 1 1/2 cups chicken broth
  • 1 (14.5 oz.) can diced tomatoes
  • 8 oz. peeled shrimp
  • 1 cup frozen peas
  • 1 cup saffron rice mix
  • 1 (3 oz.) can sliced mushrooms
  • 1/2 envelope onion soup mix (1/4 cup)
  • Paprika

Directions

  • Step 1

    HEAT oven to 350ºF. Spray a 3-quart casserole dish that has a lid with no-stick cooking spray.

  • Step 2

    HEAT oil in large skillet over medium heat. Add diced chicken and sausage. Cook and stir until chicken is lightly browned. Season with salt and pepper.

  • Step 3

    ADD chicken broth, tomatoes, shrimp, peas, rice mix, mushrooms and onion soup mix. Bring to a boil. Place in prepared casserole. Sprinkle with paprika, if desired. Cover.

  • Step 4

    BAKE about 1 hour or until rice is done.
