Pork Tenderloin with Spiced Tomato Sauce

Ingredients
- 3 tbsps. Crisco® Pure Canola Oil
- 1 1/2 lbs. pork tenderloin
- Salt and pepper
- 1 large onion
- 2 tsps. minced garlic
- 1 (15 oz.) can crushed tomatoes
- 1/2 cup water
- 1 tsp. ground coriander
- 1/4 tsp. nutmeg
- 1 ground cloves
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- Hot cooked noodles or mashed potatoes
Directions
- Step 1
HEAT oil in 10 or 12-inch skillet over medium-high heat. Season pork with salt and pepper. Brown on both sides. Remove from skillet.
- Step 2
REDUCE heat to medium. Add onion and garlic to skillet. Cook 2 minutes or until onion is clear. Add tomatoes, water, coriander, nutmeg and cloves. Simmer 10 minutes. Return pork to skillet.
- Step 3
SIMMER 15 minutes, covered, or until internal temperature reaches 145°F. Season with salt and pepper. Serve immediately with noodles or mashed potatoes.
