Ingredients

  • 2 tbsps. Crisco® All-Vegetable Shortening
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 tbsps. tomato paste
  • 1 tsp. ground cumin
  • 3/4 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. pepper
  • 2 Roma tomatoes, peeled, seeded and chopped
  • 1/2 cup sliced pimiento-stuffed green olives
  • 1/4 cup golden raisins
  • 2 tbsps. chopped parsley
  • Warm flour tortillas, shredded Manchego or white Cheddar cheese and sour cream

Directions

  • Step 1

    MELT shortening in large skillet over medium heat. Add onion, green pepper and garlic; cook 5 minutes, stirring occasionally. Add ground beef. Cook 8 minutes or until thoroughly cooked and crumbled.

  • Step 2

    STIR in tomato paste, cumin, salt, cinnamon and pepper; cook 5 minutes. Add tomatoes, olives, raisins and parsley. Cook 5 minutes, stirring occasionally.

  • Step 3

    SERVE on tortillas. Garnish with cheese and sour cream.
