Orzo with Chicken and Garden Vegetables

Ingredients
- 3 tbsps. Crisco® Pure Canola Oil
- 1 large onion
- 4 cloves garlic
- 1 red bell pepper
- 1 (14 1/2 oz.) can chicken broth
- 2 cups broccoli flowerets
- 3/4 cup uncooked orzo pasta
- 1 lb. boneless, skinless chicken breasts
- 1 1/2 cups fresh or frozen corn kernels
- Salt and pepper to taste
- 3/4 cup grated Parmesan cheese
Directions
- Step 1
HEAT oil in large skillet with a lid over medium-high heat. Add onion, garlic and red bell pepper. Cook 2 minutes. Add broth, broccoli and orzo. Reduce heat to medium. Cover. Cook 6 minutes, stirring occasionally.
- Step 2
ADD chicken, corn, salt and pepper. Cook an additional 8 minutes. Remove pan from heat. Gently stir in cheese. Serve immediately.
