Mushroom Garlic Chicken with Arugula

Ingredients

  • 5 tbsps. Crisco® Pure Vegetable Oil
  • 6 boneless skinless chicken breast halves
  • Salt and pepper
  • 6 slices Swiss cheese
  • 2 (8 oz.) pkgs. sliced fresh mushrooms
  • 3 cloves garlic
  • 2 cups baby arugula

Directions

  • Step 1

    HEAT 3 tablespoons oil in large skillet over medium heat. Season chicken with salt and pepper.

  • Step 2

    COOK chicken 6 to 8 minutes on each side until golden brown and internal temperature reaches 165°F. Remove to serving dish. Top with cheese. Cover and keep warm.

  • Step 3

    ADD remaining 2 tablespoons oil, mushrooms and garlic to warm skillet. Cook over medium heat 5 to 7 minutes or until tender. Remove from heat. Stir in arugula. Serve over chicken.
