Ingredients

  • Crisco® Original No-Stick Cooking Spray
  • 2 lbs. lean ground beef
  • 2 tbsps. Crisco® Pure Vegetable Oil
  • 1 cup chopped onion
  • 1 large red bell pepper, chopped
  • 1 tsp. minced fresh garlic
  • 1 (6 oz.) can tomato paste
  • 2 cups water
  • 1 1/2 tsps. ground cumin
  • 1 tsp. seasoned salt
  • 3/4 cup sliced pimiento-stuffed green olives
  • 1/4 cup dried currants
  • 1 recipe
  • 1/2 cup shredded sharp cheddar cheese

Directions

  • Step 1

    HEAT oven to 375°F. Coat 13 x 9-inch baking dish with no-stick cooking spray.

  • Step 2

    COOK and crumble ground beef in Dutch oven over medium heat until no longer pink. Drain and set aside. Heat oil in same pot over medium heat. Add onion, red pepper and garlic. Cook 10 minutes or until tender. Stir in tomato paste, water, cumin and seasoned salt. Simmer 5 minutes. Remove from heat. Stir in olives, currants and reserved beef. Spread evenly in prepared baking dish.

  • Step 3

    SPREAD boniatos mixture over beef mixture. Sprinkle evenly with cheese. Bake 30 minutes or until heated through.

  • Step 5

    PREPARE beef mixture and Mashed Boniatos according to directions. Divide beef mixture into 6 (16 oz.) individual casserole dishes. Spread boniatos mixture evenly over tops. Sprinkle with cheese. Bake at 375°F for 20 minutes or until lightly browned.
