Ingredients

  • 2 tbsps. Crisco® Pure Canola Oil
  • 2 lbs. boneless leg of lamb or lamb shoulder
  • 5 medium white potatoes
  • 1 cup sliced carrots
  • 3 medium onions
  • 2 tbsps. dried parsley flakes
  • 1 tsp. salt
  • 1 tsp. dried thyme leaves
  • 1 tsp. pepper
  • 3 cups water
  • 1 bay leaf

Directions

  • Step 1

    HEAT oil in Dutch oven. Add lamb. Brown over medium-high heat. Spread potatoes, carrots and onions over lamb. Sprinkle with parsley flakes, salt, thyme and pepper. Add water and bay leaf. Heat to boiling. Cover. Reduce heat.

  • Step 2

    SIMMER, stirring occasionally, for 1 1/2 to 2 hours, or until lamb is tender. Remove and discard bay leaf.
