Ingredients

  • 3 tbsps. Crisco® All-Vegetable Shortening
  • 1 large onion, halved lengthwise and thinly sliced
  • 3 medium Yukon Gold potatoes
  • 1 lb. fully-cooked smoked ham
  • 1 lb. fresh asparagus
  • 2 tsps. Creole or Cajun seasoning
  • Sour cream

Directions

  • Step 1

    HEAT shortening or oil in large skillet over medium heat. Add onion. Cook 3 minutes.

  • Step 2

    ADD potatoes. Cook 10 minutes, stirring occasionally, until golden brown and tender. Remove from skillet with slotted spoon. Set aside.

  • Step 3

    ADD ham, asparagus and seasoning to pan drippings. Saute 3 to 5 minutes or until asparagus is tender. Stir in potatoes. Heat through. Serve with sour cream.
