Ingredients

  • 1 1/4 cups plain yellow cornmeal
  • 1 1/4 cups self-rising white cornmeal Mix
  • 1 tsp. salt
  • 1/4 to 1/2 tsps. cayenne pepper
  • 1 (5 oz.) can PET® Evaporated Milk
  • 1 1/2 to 2 lbs. catfish fillets
  • Crisco® Pure Vegetable Oil

Directions

  • Step 1

    COMBINE cornmeal, salt and cayenne in shallow bowl or on sheet of wax paper. Place milk in another shallow dish. Dip fish in milk, then in cornmeal mixture to coat.

  • Step 2

    HEAT 2 to 3-inches oil in deep saucepan or deep fryer to 375ºF. Fry a few pieces fish at a time, 3 to 4 minutes, or until light golden brown. Drain on paper towels. Repeat with remaining fish. Serve immediately or keep warm in 175ºF. oven.
