Ingredients

  • 2 lbs. meaty chicken pieces (split breast, leg, thigh)
  • 1 cup buttermilk
  • 1/3 cup finely chopped onion
  • 1/3 cup plain white cornmeal
  • 1/3 cup fresh bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 tbsps. chopped fresh thyme
  • 2 tsps. dried thyme leaves
  • 1/8 tsp. ground red pepper
  • Salt and ground pepper
  • 2-3 tbsps. Crisco® Pure Vegetable Oil

Directions

  • Step 1

    COMBINE buttermilk and onion. Add chicken; cover and marinate in refrigerator 2 to 3 hours.

  • Step 2

    HEAT oven to 425°F.

  • Step 3

    COMBINE cornmeal, breadcrumbs, Parmesan cheese, thyme, red pepper, salt and black pepper in shallow dish.

  • Step 4

    DREDGE chicken in crumbs, coating all sides. Place chicken on baking sheet; drizzle with vegetable oil.

  • Step 5

    BAKE 30 to 40 minutes until chicken is crisp and juices run clear, and internal temperature reaches 165 F.
