Ingredients
- 2 lbs. meaty chicken pieces (split breast, leg, thigh)
- 1 cup buttermilk
- 1/3 cup finely chopped onion
- 1/3 cup plain white cornmeal
- 1/3 cup fresh bread crumbs
- 1/3 cup grated Parmesan cheese
- 1 1/2 tbsps. chopped fresh thyme
- OR 2 tsps. dried thyme leaves
- 1/8 tsp. ground red pepper
- Salt and ground pepper
- 2-3 tbsps. Crisco® Pure Vegetable Oil
Directions
- Step 1
COMBINE buttermilk and onion. Add chicken; cover and marinate in refrigerator 2 to 3 hours.
- Step 2
HEAT oven to 425°F.
- Step 3
COMBINE cornmeal, breadcrumbs, Parmesan cheese, thyme, red pepper, salt and black pepper in shallow dish.
- Step 4
DREDGE chicken in crumbs, coating all sides. Place chicken on baking sheet; drizzle with vegetable oil.
- Step 5
BAKE 30 to 40 minutes until chicken is crisp and juices run clear, and internal temperature reaches 165 F.
