Ingredients

  • 1 (10 oz.) bag fresh spinach, washed and de-stemmed
  • 1/4 cup Crisco® All-Vegetable Shortening
  • 1/4 stick Crisco® Baking Sticks All-Vegetable Shortening
  • 1/2 cup chopped onion
  • 1/2 cup grated Monterey Jack cheese
  • 1/2 cup grated Cheddar cheese
  • 6 fresh mushrooms
  • 2 large eggs
  • 1/2 cup Parmesan cheese
  • 1/4 tsp. freshly ground black pepper
  • 1 1/2 cups crushed saltine crackers

Directions

  • Step 1

    HEAT 1 inch water to boiling over high heat in medium stockpot. Add spinach. Cover and cook 1 minute, or until all spinach has wilted. Drain and set aside to cool. Once cooled, chop roughly.

  • Step 2

    MELT shortening slightly in a microwave-safe bowl or measuring cup. Combine with onion, Jack cheese, Cheddar cheese, mushrooms and chopped spinach. Stir well to combine. Stir in eggs, Parmesan cheese and black pepper. Form into patties. Pat crushed crackers onto both sides of patties.

  • Step 3

    COOK patties in skillet over medium heat 6 to 8 minutes per side or until golden brown. Drain on paper towels.
