Autumn Beef Stew

Ingredients
- 1/3 cup all-purpose flour
- 1 1/2 tsps. salt
- 1/2 tsp. pepper
- 2 lbs. beef for stew
- 1/4 cup Crisco® Pure Canola Oil
- 1 medium onion
- 2 cloves garlic, minced
- 2 cups apple juice or apple cider
- 1 tsp. soy sauce
- 1/4 tsp. dried thyme leaves
- 5 small potatoes
- 1 (1 lb.) pkg. carrots, peeled and thickly sliced
- 2 celery ribs
- Chopped parsley, for garnish
Directions
- Step 1
COMBINE flour, salt and pepper in large plastic bag. Add beef cubes; toss until coated.
- Step 2
HEAT oil in 6-quart Dutch oven over high heat. Add beef. Cook until browned on all sides, stirring frequently.
- Step 3
STIR in onion and garlic. Stir in apple juice. Bring to a boil over high heat. Reduce heat to low. Cover and simmer 1 1/2 hours, stirring occasionally.
- Step 4
STIR in soy sauce and thyme. Stir in potatoes, carrots and celery. Cover and cook an additional 1 1/4 hours or until vegetables are tender. Garnish with parsley, if desired.
