Ingredients

  • Crisco® Original No-Stick Cooking Spray
  • 2 tbsps. Crisco® Pure Vegetable Oil
  • 1/2 cup diced yellow onion
  • 1 clove garlic, minced
  • 1 green pepper, diced
  • 2 medium plum tomatoes, seeded and diced
  • 1 tbsp. chopped fresh parsley
  • 1 tsp. hot pepper sauce
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 large eggs
  • 1/4 cup shredded manchego cheese
  • Smoked paprika
  • Sliced crusty bread
  • Additional hot pepper sauce

Directions

  • Step 1

    HEAT oven to 350°F. Coat 4 individual 1-cup ramekins or 10-ounce custard cups with no-stick cooking spray.

  • Step 2

    HEAT oil in large skillet over medium heat. Add onion and garlic; saute 2 minutes. Add green pepper; saute an additional 2 minutes. Add tomatoes; saute another 3 minutes. Stir in parsley, hot pepper sauce, salt and pepper, cooking an additional 2 minutes.

  • Step 3

    SPOON mixture into prepared ramekins. Make a well in center of vegetable mixture in each dish using back of spoon. Break one egg into a small custard cup without breaking yolk. Gently slide egg into well in one ramekin. Repeat to add remaining three eggs to remaining ramekins. Sprinkle evenly with cheese and smoked paprika. Place ramekins on baking sheet. Bake 18 to 20 minutes or until egg whites are almost set. Remove from oven; let stand 5 minutes. (Eggs will continue cooking during standing.) Serve with bread and additional hot pepper sauce.
