Ingredients

  • 1 lb. bulk sausage
  • 1 onion
  • 1 or 2 jalapeño peppers
  • 1 red pepper
  • 2 cups (8 oz.) shredded Cheddar cheese
  • 1 cup self-rising white cornmeal Mix
  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup Crisco® Butter Flavor All-Vegetable Shortening
  • 1/4 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening

Directions

  • Step 1

    HEAT oven to 400°F.

  • Step 2

    COOK sausage, onion, jalapeño peppers and red pepper in a 9-inch cast iron skillet over medium heat. Drain; spread mixture evenly on skillet bottom. Sprinkle with cheese.

  • Step 3

    COMBINE corn meal mix, egg, milk and melted shortening in medium bowl. Beat until smooth. Pour batter over cheese.

  • Step 4

    BAKE about 20 minutes or until golden. Let stand 5 minutes. Invert skillet on platter; serve immediately.
