Ingredients

  • 1 dozen large eggs
  • 2 oz. cream cheese, at room temperature
  • 2 tbsps. milk or cream
  • 1/2 tsp. salt
  • 8 oz. Mexican chorizo sausage, chopped
  • 2 tbsps. Crisco® Pure Vegetable Oil
  • 3 green onions, thinly sliced
  • 1 large ripe tomato
  • Additional salt and pepper, to taste
  • 1/2 cup crumbled queso fresco or shredded cheddar cheese
  • 2 tbsps. chopped cilantro leaves
  • Warm corn or flour tortillas
  • Hot pepper sauce

Directions

  • Step 1

    BLEND eggs, cream cheese, milk and salt in blender until smooth.

  • Step 2

    BROWN chorizo in a hot large nonstick skillet over medium heat until heated through, about 4 to 5 minutes, stirring occasionally. Remove sausage from skillet; drain on paper towels.

  • Step 3

    HEAT oil in same skillet over medium heat. Add egg mixture; cook 2 minutes, stirring occasionally. Stir in green onions and reserved sausage. Cook an additional 2 minutes or until eggs are just set. Stir in tomatoes if using. Season with salt and pepper to taste. Sprinkle with queso fresco and cilantro. Serve with tortillas and hot pepper sauce, if desired.
