Ingredients

  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 5 tbsps. Crisco® Pure Canola Oil
  • 1 (14 1/2 oz.) can petite diced tomatoes
  • 1 tbsp. canned chipotle peppers packed in adobo sauce (1 to 2 peppers)
  • 3/4 cup chicken broth
  • 5 tbsps. chopped cilantro leaves, divided
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2/3 cup heavy cream
  • 6 large eggs
  • About 10 ounces corn tortilla chips
  • Crumbled queso fresco and sour cream

Directions

  • Step 1

    COOK onion and garlic in 1 tablespoon hot oil in large saucepan over medium-low heat until tender, about 10 minutes. Add tomatoes, chipotle pepper and chicken broth. Bring to a boil over high heat. Reduce heat to low and simmer 10 minutes.

  • Step 2

    ADD 3 tablespoons cilantro, salt and pepper to tomato mixture. Spoon into blender container. Cover and process until smooth. Return tomato mixture to same saucepan. Add cream. Heat through, but do not boil.

  • Step 3

    STIR in tortilla chips until coated with sauce, breaking up chips as necessary Let stand a few minutes to soften chips.

  • Step 4

    HEAT 2 tablespoons oil in large nonstick skillet over medium-low heat. Break 3 eggs into skillet, being careful not to break yolks. Cover and cook until whites are completely set and yolks are just beginning to thicken around the edges, about 3 to 4 minutes. Repeat to cook remaining 3 eggs in remaining 2 tablespoons oil.

  • Step 5

    SPOON tortilla chip mixture onto serving plates. Top each serving with one fried egg. Garnish with queso fresco, sour cream and remaining cilantro.
