Breakfast Burritos with Chicken Apple Sausage

Ingredients

  • 2 tbsps. Crisco® Pure Canola Oil
  • 2 links (3 ozs. each) fully cooked chicken sausage with real apples, chopped
  • 1 cup chopped red onion
  • 1 medium green pepper, chopped
  • 6 large eggs
  • 1 tsp. hot pepper sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup shredded Monterey Jack cheese
  • 4 (10-inch) warm flour tortillas
  • Diced avocado, sour cream and salsa, for garnish

Directions

  • Step 1

    HEAT oil in large nonstick skillet over medium heat. Add sausage; saute 2 minutes. Add onion and green pepper; saute 5 minutes or until vegetables are tender.

  • Step 2

    WHISK eggs, hot pepper sauce, salt and pepper in medium bowl until blended. Push sausage mixture to one side of skillet. Add egg mixture to opposite side of skillet. Stir eggs as they begin to set, forming soft curds. Stir sausage mixture into eggs and continue cooking until eggs are set. Remove from heat. Sprinkle with cheese.

  • Step 3

    SPOON sausage mixture down center of each tortilla. Fold one side of each tortilla toward center, tightly covering filling. Fold in top and bottom ends. Roll up tightly to enclose filling. Place on serving plates. Garnish with avocado, sour cream and salsa.
