STEP ONE HEAT oil in large heavy skillet over medium-high heat. Add onions, pepper, garlic and ginger. Stir-fry for about 1 minute. Add bok choy and mushrooms. Stir-fry for about 1 minute.
STEP TWO ADD lemon juice, soy sauce, sugar and salt. Stir-fry for about 2 to 3 minutes until vegetables are crisp-tender.
