Turkey Meatballs with Herbs in Savory Broth

Ingredients
- 1/4 cup Crisco® Pure Canola Oil
- 1/4 cup finely chopped onion
- 1/2 tsp. minced fresh garlic
- 1 lb. ground turkey
- 1/2 cup dry breadcrumbs
- 1/4 cup plain Greek yogurt
- 1/4 cup chopped cilantro
- 1/4 cup chopped fresh parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (14 1/2 oz.) can chicken broth
- Sliced Italian bread
Directions
- Step 1
HEAT 1 tablespoon oil in small skillet over medium heat. Add onion and garlic. Cook 5 minutes or until tender. Cool completely.
- Step 2
CRUMBLE turkey into large bowl. Add breadcrumbs, yogurt, cilantro, parsley, salt, pepper and onion mixture. Stir until blended. Roll into 1-inch balls. Chill 1 hour.
- Step 3
HEAT remaining 3 tablespoons oil in large skillet over medium heat. Add meatballs and cook on all sides until golden brown. Add chicken broth. Bring to a simmer over medium-high heat. Reduce heat to low. Cover and simmer 8 to 10 minutes or until meatball internal temperature reaches 165°F. Serve with bread.
