Savory Chorizo, Kale and Chickpea Stew

Ingredients

  • 2 tbsps. Crisco® Pure Vegetable Oil
  • 1 cup finely chopped onion
  • 1 tsp. minced fresh garlic
  • 4 oz. uncooked chorizo sausage
  • 2 cups rinsed and drained canned chickpeas
  • 1 1/2 cups chicken broth
  • 1 tbsp. Spanish paprika
  • 1/4 tsp. crushed red pepper flakes
  • 2 cups finely chopped kale, tough stems removed
  • 2 cups shredded queso blanco

Directions

  • Step 1

    HEAT oil in medium saucepan over medium heat. Add onion and garlic. Cook 5 minutes or until tender.

  • Step 2

    CRUMBLE sausage into saucepan. Cook 5 minutes or until browned. Add chickpeas, chicken broth, paprika and crushed red pepper flakes. Simmer 10 minutes.

  • Step 3

    STIR in kale; cook 1 minute. Remove from heat. Stir in queso blanco.
