Ingredients

  • 1 (14.75 oz.) can salmon
  • 1 large egg
  • 1 cup cornflake crumbs
  • 2 tbsps. Crisco® Butter Flavor All-Vegetable Shortening
  • 1/3 cup chopped celery
  • 1/4 cup chopped onion
  • 1 tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup milk
  • Crisco® Butter Flavor All-Vegetable Shortening

Directions

  • Step 1

    COMBINE salmon, egg and 1/2 cup corn flake crumbs in medium bowl. Mix well.

  • Step 2

    MELT shortening in 1-quart saucepan. Add celery and onion. Cook and stir over medium heat until tender. Stir in flour, salt and pepper. Blend in milk. Cook and stir over medium heat until mixture thickens and bubbles. Remove from heat. Blend into salmon mixture.

  • Step 3

    SHAPE by scant 1/3-cupfuls into patties. Roll in remaining corn flake crumbs to coat.

  • Step 4

    HEAT 1 1/2 to 2-inches shortening to 350ºF in deep-fat fryer or deep saucepan. Fry a few pieces at a time in hot oil 2 1/2 to 3 minutes, or until deep golden brown, turning once or twice. Drain on paper towels.

  • Step 5

    SERVE immediately or keep warm in 175ºF oven. Serve with Lemon Dill Sauce, if desired.

  • Step 7

    TUNA CROQUETTES: FOLLOW recipe above, substituting 1 (12 1/2 oz.) can tuna for salmon.
