Ingredients

  • 2 tbsps. Crisco® Butter Flavor All-Vegetable Shortening
  • 1/4 cup minced onion
  • 1/2 cup all-purpose flour
  • Dash garlic powder
  • Dash cayenne pepper, or to taste
  • 8 oz. baked ham, finely chopped
  • 1 (8 oz.) can sauerkraut
  • 1/2 cup finely shredded Swiss cheese
  • 3 large eggs, divided, slightly beaten
  • 2 tbsps. snipped fresh parsley
  • Crisco® Butter Flavor All-Vegetable Shortening

Directions

  • Step 1

    MELT shortening in small skillet. Add onion; cook and stir over medium heat until tender. Stir in 3 tablespoons flour, garlic powder and cayenne. Cook until mixture thickens, stirring constantly.

  • Step 2

    TRANSFER mixture to medium bowl. Add ham, sauerkraut, cheese, one beaten egg and parsley. Mix thoroughly. Refrigerate at least 30 minutes.

  • Step 3

    HEAT 2 to 3 inches shortening to 375ºF in deep-fat fryer or deep saucepan. Shape ham mixture by rounded tablespoonfuls into balls. Roll in remaining 1/2 cup flour to coat. Roll in 2 beaten eggs. Roll again in flour. Fry a few at a time in hot oil 2 to 2 1/2 minutes, or until golden brown. Drain on paper towels. Serve immediately or keep warm in 175ºF oven.

  • Step 4

    To make a day ahead, prepare and fry as directed. Cool. Cover and refrigerate. Reheat in single layer on baking sheet at 425ºF for 8 to 10 minutes, or until hot.
