Ingredients

  • 6 medium baking potatoes
  • Crisco® Butter Flavor No-Stick Cooking Spray
  • Salt and pepper
  • 1 (1 pound) pkg. uncooked sliced bacon
  • 1 (8 oz.) pkg. shredded sharp cheddar cheese
  • Sour cream or ranch dressing
  • 2 green onions

Directions

  • Step 1

    HEAT oven to 425°F.

  • Step 2

    PLACE potatoes in 13 x 9-inch baking pan. Coat lightly with no-stick cooking spray. Turn and coat other side with cooking spray. Bake 1 hour or until fork tender. Cool 15 minutes.

  • Step 3

    CUT potatoes in half lengthwise. Scoop out centers, leaving 1/2-inch thick shells (reserve centers for another use). Place shells, cut side up, on baking sheet. Coat lightly with no-stick cooking spray. Sprinkle with salt and pepper. Bake 20 minutes or until edges are golden brown and crisp.

  • Step 4

    HEAT broiler to high heat. Top potato skins evenly with half of the bacon and cheese. Broil until cheese is bubbly, about 2 minutes. Sprinkle with remaining bacon. Garnish with sour cream and green onion.
