Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tbsps. lemon juice
  • 3/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 large eggs
  • 1 1/2 cups fine dry bread crumbs
  • 1/3 cup Crisco® Pure Vegetable Oil
  • 1 large ripe mango
  • 1/3 cup honey
  • 3 tbsps. soy sauce
  • 2 garlic cloves

Directions

  • Step 1

    PLACE chicken in bowl. Combine 1 tablespoon lemon juice, salt and pepper. Pour over chicken. Toss to coat. Place eggs and bread crumbs in 2 separate shallow bowls. Dip chicken in eggs, then in crumbs. Place on wax paper.

  • Step 2

    HEAT oil in large non-stick skillet on medium-high heat. Fry chicken about 5 minutes per side or until internal temperature reaches 165°F. Drain on paper towels.

  • Step 3

    PLACE mango, honey, 2 tablespoons lemon juice, soy sauce and garlic in food processor. Process until blended, but not runny. Pour sauce into skillet. Bring to a boil on high heat. Reduce heat to low. Simmer 1 minute. Transfer to serving bowl. Cut chicken into strips. Dip in sauce.
