Super Easy Peanut Brittle
- Crisco® Original No-Stick Cooking Spray
- 1 1/2 cups sugar
- 3/4 cup light corn syrup
- 1 1/2 cups dry roasted peanuts
- 1 tablespoon Crisco® Butter Flavor All-Vegetable Shortening
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons baking soda
COAT a 17x14-inch baking sheet with no-stick cooking spray.
COMBINE sugar, corn syrup, and peanuts in 2 1/2-quart microwave-safe bowl. Microwave on HIGH 8 to 9 minutes, stirring half way through. Stir in shortening and vanilla until well blended. Microwave on HIGH 1 minute.
STIR in baking soda until light and foamy. Immediately pour onto prepared baking sheet and spread quickly into even layer, about 1/4-inch thick. Cool completely. Break into pieces.
To make peanut brittle on the stovetop, combine sugar, corn syrup and peanuts in 3-quart saucepan. Cook and stir over medium-low heat to 240°F on candy thermometer. Add the shortening and vanilla. Continue to cook and stir until mixture reaches 300°F. Stir in baking soda until light and foamy. Immediately pour onto prepared baking sheet and spread quickly into even layer, about 1/4-inch thick. Cool completely. Break into pieces.
