STEP ONE HEAT grill to medium high heat. Combine 4 tablespoons oil and garlic. Brush liberally on cut sides of bread. Season with salt and pepper.
STEP TWO GRILL bread, cut side down, 1 to 2 minutes until moderately charred. Turn.
STEP THREE ARRANGE tomatoes on bread. Grill, covered, 1 to 2 minutes until tomatoes are softened. Top with cheese, balsamic vinegar, remaining 2 tablespoons oil and basil, if desired.
