STEP ONE HEAT oven to 350°F. Combine oats, coconut, almonds and cinnamon in large bowl.
STEP TWO MICROWAVE coconut oil and honey in small microwave-safe bowl on HIGH 30 seconds. Stir until combined. Pour over oat mixture; stir until evenly coated. Spread evenly on 2 (15 x 10 x 1) baking pans.
STEP THREE BAKE 15 to 20 minutes, stirring every 5 minutes, until golden brown. Cool completely. Transfer to large bowl. Stir in cherries. Store in an airtight container.
