Italian Pork Cutlets



Yield: Makes 6 servings

Ingredients:

1 teaspoon Crisco® Vegetable Oil
6 (4-ounce) lean, boneless center-cut pork loin slices, 3/4 inch thick
1 (8 oz.) can tomato sauce
1 teaspoon minced garlic
1 1/2 cups sliced fresh mushrooms
1 small green bell pepper, cut into strips
1/2 cup sliced green onion with tops
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 cup shredded mozzarella cheese
Hot cooked rice for 6 servings

Preparation Directions:

1. Heat oil in large skillet over medium heat. Add pork. Brown on both sides. Add tomato sauce, garlic, mushrooms, pepper, onions, Italian seasoning, salt and pepper. Reduce heat to low.

2. Cover. Simmer 30 minutes or until meat is tender. Remove cover. Cook and stir until slightly thickened.

3. Sprinkle cheese over meat mixture. Cover. Heat until cheese melts. Serve with rice.
