Yield: Makes 4 servings
SALAD
2-1/2 cups chopped romaine lettuce
1 can (15.5oz) black beans, rinsed and well drained
1 medium tomato, chopped
3/4 cup fresh, frozen or canned corn kernels, uncooked
3/4 cup thinly sliced radishes
1/2 cup diced sweet onion, such as Vidalia
half a ripe avocado, diced
1 red bell pepper, seeded and chopped
1/4 cup crumbled reduced-fat feta cheese
HONEY-LIME DRESSING
1/4 cup fresh lime juice
1/4 cup Crisco® Vegetable Oil
2 tablespoons honey
2 tablespoons finely chopped fresh cilantro, or more to taste
1 clove garlic
1. Toss all salad ingredients in a large bowl. In a small bowl, whisk together dessing ingredients.
2. Pour dressing over salad; toss and season with salt and pepper to taste. Serve.
