Banana Fritters (Klu Ay Tod)
INGREDIENTS:
- 2 cups Pillsbury BEST® Self Rising Flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups water
- 2 large eggs, lightly beaten
- 4 large bananas, slightly underripe
- Crisco® Pure Canola Oil
- 1/4 cup honey
- Vanilla ice cream (optional)
PREPARATION DIRECTIONS:

COMBINE flour, sugar, baking powder and salt; whisk in water until mixture is smooth. Whisk in eggs; mix well. Cut bananas into 1-inch pieces. Place in batter; stir gently to coat pieces thoroughly.

POUR oil about 1 1/4 inch deep into large skillet. Heat over medium-high heat until about 365ºF. Add battered banana pieces, keeping them separated.

COOK on one side until golden. Turn pieces; cook until other side is golden. Continue to cook pieces, turning often, until light brown and crisp.

REMOVE from skillet; drain on paper towels. Place on large serving platter; drizzle with honey. Serve warm with vanilla ice cream, if desired.
